7 Layer Taco Dip Cups

I’ve been on a recipe losing streak lately. It’s been a WEEK since my last post!!  I really needed a pick me up. Something delicious to eat, that wouldn’t end up in the trash can instead of on my blog. That’s when THIS hit me. I didn’t even really have to do any actual WORK, other than scoop delicious things into a cup. I think I can handle that. What I DID have a hard time with, was taking the picture of it when I REALLY just wanted to eat it. I’ll say this much, it was a QUICK photo session. Then STRAIGHT to the table for snack timeeee. The hubs will be quite pleased when he gets home, one of these handy dandy cups is in the fridge waiting just for him : ) If you’re up for more of a challenge, definitely whip up some of my homemade guacamole – it’s the best guacamole recipe you’ll find (seriously).

Okay ANYWAY, more about this 7 layer dip. You can definitely get creative with your layer choices. I chose to use refried beans, sour cream, guacamole, Pico De Gallo, cheese, black olives, and green onions. WHOA BABY. It was MAGNIFICIENT. You don’t have to use cups, but if you do, it’s like free reign to double dip it up  I love perfectly portioned serving sizes too.


1 (16oz.) can Refried Beans
1 (16 oz.) container Sour Cream
16 oz. (or 2 cups) Guacamole
1 ½ cups Pico De Gallo (or salsa)
2 cups Shredded cheddar or Mexican cheese
1 (3.8 oz.) can Sliced black olives
½ cup Chopped green onions


Place 2-3 tablespoons of each layer into each cup and spread flat. Chill until ready to serve. The glasses I used held exactly one cup but it doesn’t need to be exact. Of course you can use one large dip bowl as well, it’s just as delicious.


Other Layer Options: Ground beef or chicken, Queso, rice, cream cheese, lettuce, diced tomatoes, onions, black beans, corn, chili
